Delicious and gluten-free!
Preheat oven to 375°F.
Combine sugar and corn starch in medium bowl. Whisk in eggs. Stir in butter, corn syrup, milk and vanilla. Fold in apples. Pour batter in pie crust. Note: if using frozen crusts, these do not need to be thawed.
Place remaining apples in overlapping circle on top of pie. Sprinkle pie with brown sugar cinnamon mixture. Bake for 45 to 50 minutes or until center of pie is set. Cool on wire rack. Refrigerate.
Recipe Note: Almond milk may be substituted for milk.
** Gluten-free pie crusts are available frozen in many larger grocery stores or in specialty shops.
